This past weekend I was invited to a brunch potluck, so I hit the interwebs for inspiration. The criteria: time efficient, cheap, and easily transportable. I settled on this Spanish Tortilla (picture: frittata meets potato gratin) which came together in about an hour and a half, and didn’t require any extra attention as I sleepily drank my coffee and stirred the onions around in a pan. This is one of those recipes that you could fiddle with — some chopped fresh herbs would fare well, and so would little bits of salty ham, or hell – bacon fat instead of butter, but at the end of the day, the recipe itself stands strong and complete, with just eggs, potatoes, onions, and a little cheese. Don’t take it out of the oven until the cheese has melted, the potato peaks have lovely color, and the hot butter is foaming around the edges.
