The other day, I cracked open a can of coconut milk for my morning oatmeal (you have to try that if you haven’t), and then randomly decided to freeze some of it in an ice cube tray. A few days later, I popped out a few cubes of frozen coconut milk and added it to my morning smoothie. It was AMAZING.
After such success with freezing coconut milk, I went searching in my fridge for other things I could portion out into ice cubes. There sat a container of Siggi’s vanilla yogurt. Into my ice cube tray it went. A day or two later, I took out my blender, added a few cubes of frozen Siggi’s, a few cubes of coconut milk, a splash of milk, a teaspoon of honey, and some fresh strawberries. And so was born: Insanely Good Strawberry Milk. This stuff is dangerous.
Insanely Good Strawberry Milk
Makes 1 big glass
2 cubes of your favorite vanilla yogurt, frozen
2 cubes of frozen coconut milk
good pour of milk — I’ve used whole milk and almond milk and both were delicious
3 or 4 strawberries, frozen or fresh
1 teaspoon honey, or to taste
Add your cubes of yogurt and coconut milk to your blender. Pour in your milk, add the strawberries and honey, and blend until your strawberry milk is smooth and frothy, adding more milk if necessary. Drink right away.
