Here’s something that I’ve learned from working at a restaurant: if you vigorously rub walnuts between your hands, you’ll remove the papery outer skin, which contains that slightly bitter flavor. What you’re left with are walnuts so addictive and delicious you’ll want to add them to everything (salads! Brownies! Granola! Oatmeal! Pasta!). Here’s how to do it…
First, spread some unsalted halved walnuts on a baking sheet and roast them quickly at 400 F for a few minutes, just until they start to smell fragrant. Let them cool slightly, then in batches, rub them vigorously in between your palms until the skin starts to rub off (setting a plate underneath will catch the walnut debris).
Keep rubbing until most of the skin has been removed. Your hands will smell wonderfully nutty and will get coated in the natural walnut oils. Not the worst problem to have :).
Drizzle them with a little olive oil and season with salt, then roast for an additional 3-4 minutes, or until they’re toasty.
That’s it! I wasn’t crazy about walnuts until I learned this trick, and now I always keep a batch on hand. Once you make them, you’ll wonder how you ever had walnuts any other way.
