One of my fondest summery childhood memories is being at the beach, inhaling pesto pasta from a blue solo cup (you can’t make this stuff up). I remember the sun had started its slow decline, and the families that remained had gathered in a wide semi-circle to watch the sunset. It’s one of those memories that will always always stick with me, and pasta with pesto will forever be associated with lazy, chilly summer nights.
Yes, there are some pasta dishes that are made for immediate consumption. Carbonara, for example. Anything with lots of cream. These pastas aren’t interested in a trip to the park. They go from stovetop to mouth in a matter of minutes and that’s just the way it is. And then there are the late night beach pastas. The ones that are resilient enough to sit in a semi-chilled cooler all afternoon and still be unharmed hours later. These pastas don’t mind a bumpy bike (or subway) ride. They aim to please. They are the golden retrievers of the pasta world. You can quote me on that. Here are five that I swear by. What would you add?
