3 Easy Desserts for Summer

There’s nothing better than topping off a long, summery meal with something sweet. Here are 3 easy dessert ideas that don’t require baking or much planning ahead because, let’s be real, you’ll be 3 glasses of wine in. Next time you’re on dessert duty for a dinner party, just bring the components to your friend’s house and assemble there — you’ll quickly become the favorite guest.

Grilled Pound Cake with Strawberries and Whipped Cream

Pick up a pound cake at the store (the best you can find). Start up the grill, cut the cake into slices, brush the sides with butter and grill them until they’re warmed through. Meanwhile, slice some strawberries and toss them in a little sugar. Lightly sweeten some heavy cream with a little powdered sugar and a dash of vanilla, and whisk it vigorously until soft peaks form. Serve on pretty plates!

Dates Stuffed with Mascarpone and Drizzled with Honey

They key here is to find Medjool dates, which are big are juicy and impossibly sweet. Slice them in half, remove the pit, then fill each half with mascarpone. Drizzle the top with a little honey and a sprinkling of sea salt.

Vanilla Ice Cream with Warm Brownies and Bourbon Cherries

Grab a pint of vanilla ice cream, a box of brownie bites (the Trader Joe’s ones are good), and a bag of fresh cherries. Remove the pits from the cherries (if you don’t have a cherry pitter, I swear by these methods), and drop them in some Bourbon. Before serving, warm the brownies in the oven. Scoop the ice cream into bowls, and top with a warm brownie, some cherries, and a drizzle of bourbon, if that’s your jam. YUM!
